1. Thiamin, riboflavin and pyridoxine status of 'low-income-group' mothers and their newborn infants was assessed by analysing paired samples of maternal and umbilical cord blood for erythrocyte transketolase (EC 2.2.1.1) (ETK), erythrocyte glutathione reductase (EC 1.6.4.2) (EGR), and erythrocyte aspartate aminotransferase (EC 2.6.1.1) (EAA) activities. 2. The vitamin status of the infants was better than that of the mothers. 3. Most of the mothers and some of the infants had biochemical evidence of thiamin and riboflavin deficiency. 4. The pregnant women had a higher EAA activity and also higher stimulation with pyridoxal-5-phosphate than the non-pregnant women of the same community. 5. There was a significant correlation between maternal and umbilical blood samples for ETK and EGR activities, but not for EAA activity or any of the coenzyme stimulation tests.

Thiamin, riboflavin, vitamin B6, magnesium, iron and zinc status, assessed from blood samples, was studied during a 24-week fitness-type exercise program. Subjects in exercise (n = 21) and control (n = 18) groups were female university students, aged 18-33 years. Erythrocyte (E) transketolase and glutathione activation coefficient, serum magnesium, zinc and ferritin, blood hemoglobin concentration and mean corpuscular volume were similar in both groups throughout the entire study. E-aspartate aminotransferase activation coefficient (vitamin B6 status) increased (4%) in exercise and decreased (7%) in control groups (p = 0.04), respectively. E-magnesium was stable in exercise but decreased (4%) in control groups (p = 0.004%). E-zinc increased (9%) in exercise subjects but remained stable in controls (p < 0.0001). A marginally altered vitamin B6 status was the only negative change found in exercise subjects.

Vitamin B1, B2 and B6 status were determined in 90 male heroin addicts admitted to Pramongkutklao Army Hospital. Their age (Mean +/- S.D.) was 25.5 +/- 7.8 years. Their activation coefficients of the enzyme transketolase, glutathione oxidoreductase and aspartate aminotransferase (ETK AC, EGR AC and EAST AC respectively) were significantly increased for addicts who were on drugs for a long time which indicated a biochemical deficiency. In addition, 26 follow-up cases treated with methadone for a period of one and two weeks were compared before and after treatment and it was found that ETK AC, EGR AC, and EAST AC were significantly decreased. This means that improvement in the vitamin B1, B2 and B6 status was obtained during admission.

This study was conducted in order to assess the nutritional status of thiamin, riboflavin, pyridoxine, carotene, retinol, ascorbic acid, plasma iron, hemoglobin and plasma albumin of the elderly living in two cooperative farms (Kibbutzim), in Israel. Blood samples from elderly subjects aged 60 to 85 (33 women, 26 men), were collected for analysis. Thiamin, riboflavin and pyridoxine status were assessed by using enzymatic activation coefficient. Transketolase was used for determining thiamin status, glutathione reductase for determining riboflavin status and glutamate oxaloacetate transaminase for pyridoxine status. Transketolase activation coefficient ranged from 1.05-1.59 with a mean 1.18 and SEM 0.02, glutathione reductase coefficient ranged from 1.08-1.50 with a mean 1.25 and SEM 0.07 and glutamate oxaloacetate transaminase activation coefficient ranged from 1.71-2.15 with a mean 1.83 and SEM 0.06. Deficient levels were found in the following: Leucocyte ascorbic acid 5% of the population, hemoglobin 18%, plasma iron 20%, carotene 32% and plasma retinol 20%, thiamin 14% and riboflavin 32%. No deficient state was found in pyridoxine.

The history and applications of food irradiation are reviewed. The term wholesomeness when applied to food irradiation, embodies the concepts of microbiological and toxicological safety, and nutritional adequacy. The status of these areas of concern is reviewed. Nutritional studies have addressed the effects of irradiation on nutrient content and bioavailability, and evaluation of potential consequences of changes in either. Results of rat studies are presented in which we tested for the presence of anti-thiamin and anti-pyridoxine activity in radappertized chicken and beef. Test meats were analyzed for thiamin and pyridoxine to establish a basis for incorporation into repletion diets. Thiamin levels in gamma- and electron-irradiated, and thermally processed (commercial canning) chicken were 74, 34 and 78%, respectively, of the vitamin level in a frozen meat reference; the levels in beef were 77, 56 and 79%, respectively. Pyridoxine levels in chicken were 50, 38 and 17%, respectively, of the reference level. Rats were depleted in each vitamin, then repleted at two vitamin levels with diets containing test meats. Activities of transketolase, aspartate aminotransferase and alanine aminotransferase in erythrocytes from these rats provided no consistent evidence of antivitamin presence. It was concluded that these irradiated meats pose no problem regarding vitamins B1 and B6 if part of a complete diet.
