This study sought to characterize the distribution of phenols and antioxidant activities in hot short pepper (Capsicum frutescens var. abbreviatum) and their inhibition of cyclophosphamide-induced oxidative stress in rat's brain. The total phenol content and antioxidant activities of pepper flesh (pericarp) and seeds were determined in vitro and in vivo. The results of the study revealed that intraperitoneal administration of cyclophosphamide (75mg/kg of body weight) caused a significant increase (P<0.05) in the malondialdehyde (MDA) content of the brain; however, there was a significant decrease (P<0.05) in the brain MDA content, in those of rats fed diet containing pepper; the flesh showed a higher inhibitory effect. In addition, dietary inclusion of the pepper (seed and flesh) also caused a dose-dependent inhibition of serum glutamate oxaloacetate transaminase (SGOT), glutamate pyruvate transaminase (SGPT), alkaline phosphatase and total bilirubin; likewise, dietary inclusion of the flesh inhibited MDA production than the seeds. The higher inhibition of oxidative stress in brain and serum enzymes and metabolites by the flesh could be attributed to its significantly higher (P<0.05) total phenol content, reducing power and free-radical scavenging ability. Therefore, dietary hot short pepper (Capsicum frutescens L. var. abbreviatum) could prevent cyclophosphamide-induced oxidative stress in brain; although the flesh is a better protectant, the possible contributory role of the seeds cannot be neglected. However, this protective effect of the pepper could be attributed to their antioxidant properties.

The fruits of the habanero plant (Capsicum chinense Jacq.) are commonly used as spices. Their exceptionally hot flavour is the result of the substantial content of capsaicin that has among others the anticancer action. The experiments assess the impact of intragastric administration of a suspension of dried matter (dm) habanero fruit in peanut oil on the state of the digestive tract and parenchymal organs of rats. Habanero fruit with three different doses (0.08, 0.05 and 0.025 g of dry matter (d.m.) habanero fruit/kg b.w.) in 2 equal doses every 12 hours during 28 days was administered intragastrically in male rats. In day 8, 15 and 29 blood proofs were obtained to measure hematological parameters and alanine aminotransferase (ALT), aspartate aminotransferase (AST) activity, total bilirubin (BIL), total cholesterol (CHOL), glucose (GLUC), urea (U), and creatinine (CREA) content. Internal organs of rats were examined anatomopathologically. Between the study groups and control group there were no statistically significant differences in studied parameters. Post-mortem examinations as well as histological findings showed no pathological changes in the organs of rats. The study demonstrated a high level safety of the fruit habanero (Capsicum chinense Jacq.) administration in rats. There were no hematological, biochemical or post-mortem changes at doses that due to the amount of capsaicin can exhibit antitumor properties.

To explore the mechanisms of pepper (Capsicum annuum L.) cytoplasmic male sterility (CMS), we studied the different maturation processes of sterile and fertile pepper anthers. A paraffin section analysis of the sterile anthers indicated an abnormality of the tapetal layer and an over-vacuolization of the cells. The quantitative proteomics results showed that the expression of histidinol dehydrogenase (HDH), dihydroxy-acid dehydratase (DAD), aspartate aminotransferase (ATAAT), cysteine synthase (CS), delta-1-pyrroline-5-carboxylate synthase (P5CS), and glutamate synthetase (GS) in the amino acid synthesis pathway decreased by more than 1.5-fold. Furthermore, the mRNA and protein expression levels of DAD, ATAAT, CS and P5CS showed a 2- to 16-fold increase in the maintainer line anthers. We also found that most of the amino acid content levels decreased to varying degrees during the anther tapetum period of the sterile line, whereas these levels increased in the maintainer line. The results of our study indicate that during pepper anther development, changes in amino acid synthesis are significant and accompany abnormal tapetum maturity, which is most likely an important cause of male sterility in pepper.
